It's Chili Time!

It’s Chili Weather!

Alright, well, I make a pretty mean chili. I like a lot of flavor in my chili and while I wasn’t born and raised in Texas, I still think I can make a pot of chili with the best of them. I’ve promised my recipe to a few folks out there so here it is. Enjoy!

Oh…also take note. I do not put beans of any type in my chili. If you want ruin yours, go ahead. But, I guarantee you won’t miss them if you don’t!

Be forewarned, I was so intent on the chili; I didn’t take many pictures. Don’t let that discourage you, it is good chili.


Brown 4lbs of ground chuck, 1 lb of pork sausage, 1 red pepper, 1 green pepper, 1 yellow or orange pepper, all chopped and one chopped onion in a good size dutch oven.






Add 18 oz tomato paste, 1 can progresso tomato basil soup (not the high fiber kind) 2 15 oz cans del monte diced tomatoes (chili seasoned), 2 tsp hickory smoke flavored Liquid Smoke, 1 Tbs Arizona Dreaming, 8 Tbs Chili Powder, 2 Tbs Red Pepper flakes, 1 Tbs Forward to the mix and stir.

(All the spices mentioned above are from Penzeys. If you haven’t heard of Penzeys, check them out. I love their spices and spice blends. You will too, I’m sure of it. Seeing as how I am in Oklahoma now, I will have to order my refills online.)




Last but not lease, I filled up this Winnie the Pooh mug with water and added two beef bouillon cubes and dissolved them in the microwave. I measured it for you…it’s 2 ½ cups of water.

(Here is where I totally left the camera somewhere and was focusing on chili. Sorry!)

Add that to the pot.

Let simmer for several hours. It’s even better if you let it sit over night. But, who can wait that long…really?

I chop red onion and have some shredded cheddar cheese to top it with. Oh, and don’t forget the dollop of sour cream. It helps cut the spice.

Ingredients:

4lbs ground beef
1 lb ground pork sausage
1 onion, chopped
1 green pepper, chopped
1 red pepper, chopped
1 yellow pepper, chopped
18 oz tomato paste
1 can Progresso tomato basil soup
2 15 oz cans diced tomotoes, seasoned for chili
2 tsp hickory smoke flavored liquid smoke
8 Tbs chili powder
1 Tbs Arizon Dreaming (penzey's blend)
2 Tbs Red Pepper Flakes
1 Tbs Forward (Penzey's blend)
2 beef bouillon cubes dissolved in 2 1/2 cups water

Serves a lot!

They were just too pretty to not put in!
